Charlie Bigham’s launches new Brasserie range – bringing dining out, in

Charlie Bigham’sThe UK’s favourite premium home-prepared meal brand, Charlie Bigham’s, has launched its most indulgent collection yet – the Brasserie range, exclusively launching in selected Waitrose stores  from 15th October.

Created to “bring dining out, in,” the Brasserie range captures the essence of restaurant dining, with elevated dishes designed to be enjoyed from the comfort of your own home. Each dish is showstopping and worthy of lighting your own candle at home, expertly crafted by hand using restaurant-level techniques – from individually hand-rolled Beef Wellingtons to slow-braised wild venison and expertly french-trimmed chicken legs, proving you don’t need a reservation to enjoy restaurant-quality food.

Recent research commissioned by Charlie Bigham’s reveals that 86% of couples agree that food is the most important part of a romantic evening, and nearly half (48%) would rather stay in than go out. Because food is at the heart of these moments, Charlie Bigham’s has created food worthy of the occasion, with The Brasserie range bringing restaurant-quality indulgence into the intimacy of home.

“Showstopping food doesn’t always have to mean going out,” says founder Charlie Bigham. “With the Brasserie range, you can have that same restaurant-quality experience at home – the kind of treat-worthy food you’ll want to take your time over and really enjoy together.”

The Brasserie Range Dishes

Beef Wellington (RRP £29.95)
Prime centre-cut beef fillet is wrapped in rich mushroom duxelles made with Pedro Ximénez and chicken liver for a deeply savoury finish. It is dressed with Dijon mustard and thyme, then hand-rolled and encased in golden puff pastry. Each Beef Wellington delivers a showstopping, restaurant-quality experience at home.

Venison Bourguignon (RRP £16.95)
Wild-caught Scottish venison shoulder – a dish more often enjoyed in restaurants than at home – is marinated, seared, and slow-cooked in red wine until tender. Served with roasted Borettane onions, Chantenay carrots, and chestnut mushrooms, and accompanied by an indulgent browned butter mashed potato topped with a Parmesan crumb, this dish brings a restaurant favourite into the comfort of home.

Coq au Vin (RRP £16.95)
Bigham’s chefs expertly french-trim chicken legs, which are then marinated in red wine and slowly braised before being served atop a rich sauce of roasted chestnut mushrooms, Chantenay carrots, onions, and bacon. Finished with potato and celeriac dauphinoise, this dish offers deep, comforting flavours with the finesse of a French bistro.

Salmon Wellington (RRP £19.95)
Sushi-grade salmon fillet is layered by hand with spinach, capers, and leeks in a delicate white wine velouté, then wrapped in rich mushroom duxelles, a splash of Pedro Ximénez , and golden puff pastry. Crafted for smooth, indulgent flavours and a refined mouthfeel, this Wellington brings restaurant-quality dining to the home table.

Duck confit & Pommes Anna (RRP £16.95)
Confit Gressingham Duck legs are slow-cooked in their own fat with garlic, thyme and rosemary until tender. Then served atop a rich sauce of lentils, red wine and smoked bacon, finished with caramelised onions and a moreish garlic-parmesan crumb. Accompanied by sliced potatoes with nutty browned butter and a cheddar-parmesan topping, this dish brings restaurant-quality indulgence to your home – now it’s over to you to dim the lights and light a candle.

Every dish is hand crafted in small batches in the brand’s London kitchen, where Bigham’s chefs use traditional cooking techniques and carefully sourced restaurant-quality ingredients to guarantee food is certain to make your date night extra special.

The Brasserie Range is available now in selected Waitrose stores across the UK.
