Copenhagen Distillery releases newest experimental whisky, RARE No.4

Home of creative spirits, Copenhagen Distillery rediscovers old Danish grain, Spelt to develop innovative whisky

Copenhagen Distillery‘Distinctively Danish’ whisky producer, Copenhagen Distillery has launched RARE No.4, its newest iteration in the innovative series.

Limited to just 1,000 bottles, RARE No.4 explores the ancient grain Spelt; a thoughtful reflection of Denmark’s agricultural heritage and the distillery’s commitment to blending cultural depth with forward-thinking whisky innovation.

A playground of experimentation and pioneering whisky creation, the RARE series pushes boundaries and uses revolutionary techniques and ingredients to introduce a new whisky profile to the industry. The previous release incorporated organic malted emmer into the core ingredients and RARE No.4 continues this spirit of innovation, placing this almost-forgotten grain, Spelt, at the heart of its bold new expression.

Lasse Öznek, master distiller at Copenhagen Distillery, comments: “We’re very excited to launch our newest iteration of RARE. This range gives us the freedom to explore flavours and ingredients rarely seen in traditional whiskies. It’s a space for creative experimentation, where we embrace the versatility of spirits and rediscover forgotten grains such as Spelt, elevating them through our innovative, modern approach. With this collection, we have crafted whiskies with a forward-thinking, scientific perspective to bring something truly original to our global audience.”

The last of the trio of old wheat grains, following emmer and einkorn, Spelt has seen a recent revival over the last decade with farmers and bakers using it for its complex whole grain flavour. A natural development from its predecessor, RARE No.3, which was based on emmer, Spelt is a hybrid between the two old wheat grains and is easier to cultivate and use. In line with Copenhagen Distillery’s 100% organic Danish ingredient standpoint, and the rise in its popularity, the use of Spelt for RARE No. 4 was an instinctive choice.

The Spelt New Make has been resting in 100 litre casks made from Copenhagen Distillery’s signature Hungarian oak casks. The end result is a unique and complex explosion of sweet cereals, dried papaya, and delicate green jasmine tea on the nose. On the palate soft elegant tannins, rock candy, gently oxidized papaya and umami undertones lead the way, followed by an exceptional layered aftertaste of roasted bread and nuts, raw cocoa and light dry oak tannins.

RARE No.4 will be available in select markets across the globe, including in eight European countries. RARE No.4 is priced from €320.
