Is the oat milk era over? Baristas say soya is the secret star of coffee menus this World Plant Milk Day

HendersonOat may currently reign supreme for dairy-free drinkers, but according to baristas, the plant milk that actually performs best in your flat white isn’t new, it’s a classic.

According to Sam Henderson, former UK Barista Champion and Starbucks EMEA group beverage development manager, soya is the “barista’s best-kept secret.”

“Soya was the first plant-based milk on the scene. It flies under the radar, but it steams and froths like a dream,” says Sam. “It delivers a silky texture and fluffy foam that rivals dairy, especially in lattes, cappuccinos and macchiatos.”

“It provides a great alternative to dairy milk in terms of flavour and texture, bringing out the flavours of espresso and adding depth without being overwhelming. Hot or iced, with flavour or without it’s a real all-rounder.”

With World Plant Milk Day landing today, this might be the moment for soya’s quiet comeback.

Once upon a time, going dairy-free meant paying extra, but not at Starbucks, where dairy alternatives including oat, soy, almond, and coconut drink are offered at no extra charge. That small shift makes a big difference for anyone choosing plant-based as a lifestyle, not a luxury.

Henderson adds: “It’s not about replacing dairy. It’s about creating a better version of your favourite drink. And sometimes, the right milk is the final piece of that puzzle.”
