Ricks has announced it will open its doors on Saturday, 31 October, with the reservation line open from today (26 October).
Formerly operating as Rabble, the restaurant, bar and 10-bedroom boutique hotel will reclaim its original name, bringing back one of Edinburgh’s most distinctive independent hospitality destinations under the Montpeliers Group.
First opened in 2000, Ricks earned international recognition, named among Condé Nast Traveller’s 25 coolest places to stay in its first year and later ranked among the world’s top 100 bars.
The refurbishment celebrates the spirit that made Ricks an Edinburgh favourite: a place that takes what it does seriously, without taking itself too seriously.
Sean Weeraratna, managing director of Montpeliers Group, explains: “The comeback is less about reinvention and more about remembering what Ricks always was: a proper independent Edinburgh restaurant and bar with rooms. Somewhere you come for the food, stay for another drink and don’t want to leave.”
At the heart of the relaunch is a menu by group executive chef Ross Giamblanco, championing seasonal British produce and trusted local suppliers, including John Gilmour Butchers, Cumbrae Oysters and hand-picked crab from Tarbert. Open from 7.30am for breakfast, Ricks will serve everything from relaxed lunches to dinner, alongside a drinks list curated by general manager Josh Ramsay; expect expertly made classics, creative signature cocktails such as the Ricks Modern Martini and Grasshopper 2.0, selected wines and a considered draught beer offering.
With its 10 refurbished bedrooms completing the experience, Ricks is once again set to be the ‘place to be’ in Edinburgh, amongst locals as well as visitors.
Ricks returns as part of Montpeliers Group – an independent Edinburgh hospitality group that has been part of the city’s social life for over two decades.
The reservation lines are now open. Guests can book a table or a stay at Ricks via ricksedinburgh.com.
