Co-opCo-op has unveiled its summer 2026 range, spanning everything from small plates and barbecue favourites to refreshing drinks, ice cream, desserts and the latest food trends – designed for those last minute ‘pop to Co-op’ moments that come into their own during the summer season.

A new 25 strong Irresistible Small Plates range features Mediterranean inspired dishes for casual dining, available on a 3 for 2 offer across the wider picnic and deli range. Highlights include tapas dishes such as Irresistible Cook & Glaze Chorizo with a rich port and balsamic glaze, alongside crispy Irresistible Pancetta Croquettes with an indulgent fondue dip and Irresistible ’Nduja Bravas, combining fried potatoes with a sweet, smoky sauce. Lighter picnic grazing options include creamy Irresistible Whipped Ricotta with seasonal pickled chargrilled courgettes, Irresistible Pesto & Pecorino Coleslaw made with herby pesto mayonnaise, and Irresistible Feta & Summer Vegetable Quiche topped with a paprika crumb.

Co-op is dedicated to Backing Britain and as a long-term supporter of British farmers, continues its commitment to 100% British own brand fresh and frozen meat, including when used as an ingredient. For a staple British barbecue, new additions include Irresistible Aberdeen Angus Rump Steaks with Chimichurri Butter, Greek Style Chicken Sizzle Steaks and Irresistible Chorizo Style Pork Sausages, all which join returning favourites such as burgers, ribs and sausages.

Alongside savoury, Co-op has refreshed its desserts and ice cream range, with Irresistible Alphonso Mango Cheesecake Slices and Pistachio Tiramisu bringing on trend flavours into the retailer’s dessert offering, while shoppers can enjoy a bright, fruity Lemon & Blueberry Ripple Ice Cream or indulge in Salted Caramel Pretzel Mini Bites for a sweet and salty, bite sized treat. Co-op remains a long-standing supporter of Fairtrade, and by the end of the summer, its entire own brand ice cream range will be ‘all that can be’ Fairtrade, meaning all ingredients that can be Fairtrade, are Fairtrade.

Tapping into the biggest food trends sweeping the UK, the nation’s growing love of tangy flavours has put pickles firmly in the spotlight, with Co-op’s Dill Pickle Crisps catering to snack lovers looking for flavours which pack a punch. Additionally, joining Co-op’s popular crisps range, Irresistible BBQ Lamb Kofta & Tzatziki Crisps, which were recently named ‘best crisps’ in Good Housekeeping’s Best Picnic Food 2026 awards.

Matcha is also set to be one of the season’s standout trends, with Irresistible Matcha Strawberry & White Chocolate Cookies launching in the bakery aisle. Paired with Co-op’s Matcha Latte Sachets, shoppers can enjoy the coffee shop experience at home.

With football fever set to take over, Co-op will also offer a selection of ‘big occasion’ products and deals designed for match day moments. From fully loaded Detroit Style Pizzas to a lunchtime Chicken Balti Sub with onion and beer sauce – a playful option for spectators on the go. A new iteration of the popular Served meal deal, American Smokehouse, will also land in June for easy dinners at home, ready in just 30 minutes.

Own brand health drinks aimed at boosting collagen and gut health include three juice drinks, Lemon & Lime Electrolyte Water, Berries & Pomegranate Bovine Collagen Water, and Mango & Passionfruit Fibre Water, and two juice shots which has joined the convenience retailer’s “Good Fuel range”, each formulated with ingredients such as vitamins, probiotics and collagen to promote health benefits from everything to gut health to hydration.

The summer range is supported by Co-op’s wider seasonal beers, wine and spirits offering, including new ready-to-drink cocktails Aperitivo Spritz and Hugo Spritz and premium own brand wines such as Irresistible Alvarinho and Irresistible Eight Acres Sparkling Rosé.

Alexa Masterhorn, head of product development at Co-op, said: “Our team of product developers are total food lovers who care deeply about quality and innovation, and sourcing ingredients to focus on the products that matters most to our shoppers.

As the UK’s leading convenience retailer, we’re positioned exactly where our shoppers need us – whether it’s an impromptu barbecue or an easy picky tea. When you pop to Co-op, look out for everything from small plates, barbecue essentials, drinks and treats to exciting trend-led launches and limited-edition products, celebrating the best flavours the season has to offer.”
