GAIL’s to open most sustainably built bakery yet

Gail'sIn late January 2025, GAIL’s are opening their most sustainably built bakery yet. Based in the historic former London Fire Brigade building at 94 Southwark Bridge, London, SE1 0DG, could there be a more apt location to trial ideas designed to reduce the pressure on our overheating world?

This new bakery reflects GAIL’s dedication to creating positive changes through thoughtful design and responsible practices. Every detail of the space has been carefully considered through three key principles:

  1. Waste Not – The design is rooted in sustainability, with all materials carefully selected for future reusability. The counters have been designed for disassembly, allowing materials to be repurposed later. The tiles used are leftovers from previous bakery fitouts, and the flooring is made from reclaimed timber from an old gymnasium. Key features of the historic building, such as the glass screen to the staff room and the wall panelling, have been preserved. PVC-based materials were avoided in favour of stainless steel, which can be recycled at the end of its life.
  2. Craft with a Conscience – GAIL’s has collaborated with social enterprises and sustainable designers to ensure the bakery is a model of environmental responsibility. The communal table, made from a locally sourced black poplar tree by Goldfinger, exemplifies the brand’s commitment to both the community and sustainability. The countertops and front panels are crafted from Smile Plastics, a company producing 100% recycled and recyclable materials. The lighting fixtures are 3D printed, further improving recyclability and reducing waste.
  3. Healthy Spaces – GAIL’s also prioritises creating a welcoming and uplifting environment for its team. The bakery has been designed to ensure that all spaces, including the back of house, are visible and integrated into the customer experience. Daylight sensors adjust the lighting levels based on natural light, optimising energy efficiency throughout the day.
