The pizzeria on a mission to set a new standard for pizza craft will land in Trafford Centre’s Orient this summer

Fast-growing Neapolitan pizzeria Forbici is strengthening its mission to deliver a new wave of pizza to diners with expansion into high-footfall leisure destinations, announcing a new opening at The Orient in  Trafford Centre this summer.

The move marks a significant step in the pizzeria’s growth trajectory signalling its ambition to scale beyond city-centre locations.

Founded in Manchester just over a year ago, Forbici has quickly built a strong reputation for precise pizza craft with celebrity chef Marco Pierre White describing the pizza as the “best ever”. Following a successful second launch in Sheffield earlier this spring, the Trafford Centre site will become the pizzeria’s third location and its first within a major leisure destination.

Diners can expect Forbici’s signature take on pizza craft with its three-generation Biga dough, slow-fermented to create a light, risen crust with real depth of flavour. Each and every ingredient on the menu is selected for its delivery on taste from sweet San Marzano tomatoes to carefully sourced Italian produce that lets each pizza do the talking. Meaning ‘scissors’ in Italian, Forbici pizzas are cut with scissors in four ways.

Forbici’s Manchester special, the Lancashire Hotpot, will be on offer serving up a delicious mix of fior di latte, lamb ragú and black pepper served on a Forbici biga dough base.

Forbici’s signature creations include classics such as the Marinara, Margherita and American, alongside Italian-inspired creations like the Provola e Pepe, topped with San Marzano tomato, smoked provola, black pepper and fresh basil, as well as indulgent white-base pizzas such as the Porcini e Tartufo, loaded with Fior di latte, porcini mushrooms, Italian truffle sauce and chives.

Toni Dennan at Forbici, said: “Trafford Centre represents an important milestone for us as we continue to grow the Forbici brand. Expanding into a leading leisure destination allows us to introduce Forbici to a broader audience while maintaining the craft and precision that defines our pizzas.”

Kitty Vaughan, Head of UK F&B and Leisure at Pradera Lateral, Trafford Centre’s asset managers, said: “Forbici is a very special addition to Trafford Centre’s outstanding F&B offer. As a viral Manchester brand known for high-quality Neapolitan food, its arrival marks an exciting milestone as only its third restaurant and first within a shopping centre. Forbici perfectly complements our approach to curating a dynamic mix of brands that give visitors more reasons to return, stay longer and enjoy new experiences, and we are delighted to welcome such an exceptional operator to this landmark destination.”

Blending Neapolitan tradition with a modern, scalable format, Forbici continues to build momentum as one of the UK’s most exciting pizzerias.

Forbici opens at The Orient, Trafford Centre Summer 2026.
