Cornish Bakery is set to launch three new bakeries in Hereford, Woodbridge, and Portsmouth’s Gunwharf Quays, whilst also more than doubling the size of its popular York Coney Street location. This hat-trick and a half (expansion) is just one chapter in the company’s ongoing growth success story.
In what is set to be another exceptional year for Cornish Bakery, the three new bakeries will open from July 2025 with another five new properties that are currently in legals to be announced soon. These launches are part of a transformational growth plan, which identified opportunities to expand Cornish Bakery from its current 66 bakeries to a potential 411 locations across the UK.
From the humble origins of a small fishing village in Cornwall, Cornish Bakery has been highly successful in expanding into ‘tourist hotspots’ and has since moved into market and cathedral town high streets, smaller cities, designer shopping villages, motorway services, and the NEC in Birmingham.
On July 7th, Cornish Bakery will unveil a dramatically expanded flagship bakery on Coney Street, York, following the takeover of the adjacent unit formerly occupied by Krispy Kreme. The transformation will more than double the size of the existing bakery, significantly increasing seating capacity across two stylish floors from 16 to 66. Having operated very successfully in York since 2017, this expansion marks a major further investment in the city, a clear sign of Cornish Bakery’s long-term commitment to the area.
The first new bakery to launch this summer is in the city of Hereford on July 21st. Located at 9 High Street in a prominent corner unit, it will bring fresh energy to a long-vacant site near the city’s Cathedral and the famous Chained Library. Featuring a striking ‘burnt’ terracotta shopfront, an inviting open-plan layout, high ceilings and huge window frontage, it is likely to be the city’s lightest and brightest space with seating for up to 60 visitors.
On August 11th, Cornish Bakery will be opening a beautiful design-led bakery in the heart of Woodbridge, Suffolk. Located at 37 Thoroughfare, the premium 124-square-metre space will feature a light-filled, open-plan interior with seating for 45 and a welcoming outdoor area. Designed to reflect Woodbridge’s rich boat-building heritage, the bakery will include a hand-crafted wooden bar, maritime-inspired pendant lighting and a soft, classic colour palette. Thoughtfully curated details such as mid-century seating, natural planting and aesthetic timber panelling will create a calm, inviting atmosphere.
Later this year, the company will open its largest ever bakery in the vibrant waterfront shopping destination of Gunwharf Quays, Portsmouth. Cornish Bakery has successfully traded at Gunwharf Quays since it opened in 2001. The shopping outlet recently announced its next phase of redevelopment to enhance shopfronts and facades and improve landscaping.
Cornish Bakery has secured a new unit that spans two storeys and features a stunning balcony terrace. It will trade alongside Cornish Bakery kiosk, which opened recently as a permanent structure and has enjoyed consistent success ever since. The impressive new space is designed to meet strong customer demand and will become a flagship destination for the company.
